The planted grape varieties:
Perfectly adapted to the various soils of Wolxheim, it is resolutly
directed to the up-market production: 35% Riesling, 21% Pinot Blanc,
14% Gewurztraminer, 10% Pinot Noir, 8% Pinot Gris, 6% Sylvaner,
and 5% Chardonnay for the Crémant d'Alsace production.
More than 3 hectares in grand cru area.
Cultural practices:
Application of respecful practices for the environment:
-permanent putting in grass of the vineyard,
-no chemical amendments, no remanents weed killers,
-biological conflict conters the destructives,
-interventions reasoned against diseases with copper and sulphur,
-respect for the natural cycle of the grapevine and the plants of the soil,
-strengthening of the own capacities of defence of the grapevine,
-pulverization of natural trace-elements on foliage.
The Harvest:
Realised only by hand, to take a selected vintage
and no triturated grapes.
The Wine making:
Elaborate wines gently, with wisdom and patience, in the respect for
their own rhythm of evolution, starting from spontaneous fermentations without contribution of commercial yearsts.
A Style of wines:
The research for the harmony between the spontaneous expression
of the grape type and the soil identity to became wines printed
by elegance and authenticity.
A Philosophy:
"Live with the vine! Live with the Wine!"
which rules find roots in convictions tested by several generations,
so that always was written:
"Vineyard, Vine, Vinegrower's wines with V like Verity!"
